Greek Lamb Rib Stew with Potatoes and Olives
This delicious Greek-style stew is a hearty and comforting meal. Lamb ribs are slow-cooked in a rich tomato and oregano sauce with potatoes, olives, and feta cheese. Serve it with a side of crusty bread to soak up all the delicious flavors.
Ingredients:
– 850g lamb ribs
– 2 tablespoons olive oil
– 1 large onion, diced
– 2 cloves garlic, minced
– 2 tablespoons tomato paste
– 675ml chicken stock
– 2 tablespoons dried oregano
– 2 bay leaves
– 500g potatoes, peeled and cut into cubes
– 180g kalamata olives
– 70g feta cheese
– Salt and pepper to taste
Instructions:
1. Preheat the oven to 200°C.
2. Heat the olive oil in a large oven-safe pot over medium heat. Add the lamb ribs and cook until lightly browned, about 5 minutes.
3. Add the onion and garlic and cook until the onion is softened, about 5 minutes.
4. Add the tomato paste, chicken stock, oregano, bay leaves, and potatoes. Bring to a simmer and cover the pot.
5. Transfer the pot to the oven and cook for 45 minutes.
6. Add the olives and cook for an additional 15 minutes.
7. Remove the pot from the oven and stir in the feta cheese.
8. Season with salt and pepper to taste.
9. Serve the stew with crusty bread and enjoy!
