Rib eye steak with blue cheese sauce

Ingredients:

For the rib eye steak:

  • 2 rib eye steaks, each weighing 300g
  • 2 tablespoons olive oil
  • 1 tablespoon kosher salt
  • 1 tablespoon freshly ground black pepper

For the blue cheese sauce:

  • 1/4 cup heavy cream
  • 1/4 cup crumbled blue cheese
  • 2 tablespoons unsalted butter
  • 1 clove garlic, minced
  • Salt and freshly ground black pepper to taste

Instructions:

  1. Preheat your braai to high heat.
  2. Brush the rib eye steaks with olive oil and season with kosher salt and black pepper.
  3. Place the steaks on the braai and cook for 3-4 minutes per side, or until they reach your desired level of doneness. For medium rare, the internal temperature should be around 55°C.
  4. While the steaks are cooking, prepare the blue cheese sauce. In a small saucepan, melt the butter over medium heat. Add the garlic and cook for 1-2 minutes, until fragrant.
  5. Add the heavy cream and blue cheese to the saucepan and stir until the cheese has melted and the sauce is smooth. Season with salt and pepper to taste.
  6. Once the steaks are done, remove them from the braai and let them rest for 5-10 minutes.
  7. Serve the rib eye steaks with the blue cheese sauce drizzled on top. Enjoy!

Note: You can also use a grill pan on the stovetop instead of a braai if you prefer.
