Middle Eastern Lamb Rib Stew with Dates and Pistachios

Introduction
This Middle Eastern Lamb Rib Stew with Dates and Pistachios is the perfect warming meal for a cold winter’s night. With the sweetness of dates, crunch of pistachios, and succulent lamb, this stew is sure to impress.

Ingredients
– 1.5 kg of lamb ribs
– 2 tablespoons of olive oil
– 1 teaspoon of ground cumin
– 3 cloves of garlic, minced
– 2 onions, diced
– 6 tablespoons of tomato paste
– 1 teaspoon of ground coriander
– 1 teaspoon of ground cinnamon
– 2 cups of beef stock
– 1 teaspoon of salt
– 1 teaspoon of freshly ground black pepper
– 1/2 cup of pitted dates, chopped
– 1/2 cup of pistachios, chopped

Instructions
1. Preheat the oven to 175°C.

2. Heat the olive oil in a large oven-safe pot over medium-high heat.

3. Add the lamb ribs to the pot and brown on both sides, about 5 minutes per side.

4. Add the garlic, onions, cumin, coriander, and cinnamon to the pot and cook for an additional 3 minutes, stirring occasionally.

5. Add the tomato paste and beef stock to the pot and bring to a boil.

6. Cover the pot and transfer to the preheated oven. Bake for 1 hour.

7. Remove the pot from the oven and add the dates, pistachios, salt, and pepper. Stir to combine.

8. Return the pot to the oven and bake for an additional 30 minutes, or until the lamb is tender.

9. Serve hot with cooked rice or couscous. Enjoy!
