French Lamb Rib Stew with White Wine and Herbs

French Lamb Rib Stew with White Wine and Herbs
Ingredients:
– 1.4 kg lamb ribs, cut into individual ribs
– 2 tablespoons olive oil
– 1 onion, diced
– 2 cloves garlic, minced
– 2 stalks celery, diced
– 2 carrots, diced
– 1 bay leaf
– 1 teaspoon fresh thyme
– 1 teaspoon fresh rosemary
– 2 tablespoons tomato paste
– 1 cup white wine
– 2 cups beef broth
– 2 tablespoons butter
– 2 tablespoons all-purpose flour
– Salt and pepper, to taste
Instructions:
1. Preheat oven to 180°C.
2. Heat the oil in a large pot over medium heat. Add the lamb ribs and cook until lightly browned, about 5 minutes.
3. Add the onion, garlic, celery, carrots, bay leaf, thyme and rosemary and cook for another 5 minutes.
4. Add the tomato paste, white wine and beef broth and bring to a boil. Reduce heat to low and simmer for 30 minutes.
5. Transfer the stew to an oven-safe dish and bake in the preheated oven for 1 hour.
6. In a small saucepan, melt the butter over medium heat. Add the flour and stir until a paste forms. Slowly add the remaining beef broth and cook until thickened, about 10 minutes.
7. Pour the thickened sauce over the stew, stir to combine and season with salt and pepper to taste.
8. Serve with mashed potatoes or crusty bread. Enjoy!
