Introduction:
This Spanish Lamb Rib Stew is a hearty and flavorful meal that is sure to please even the pickiest of eaters. Ingredients:
– 800g of lamb ribs
– 3 cloves of garlic, minced
– 2 teaspoons of sweet paprika
– 2 tablespoons of olive oil
– 2 chorizo sausages, diced
– 1 onion, diced
– 2 carrots, diced
– 2 celery stalks, diced
– 2 bay leaves
– 1 litre of beef stock
– 400g of cannellini beans, drained
– 2 tablespoons of chopped parsley
– Salt and pepper to taste
Instructions:
1. Preheat the oven to 180°C.
2. Place the lamb ribs onto a baking tray and season with salt and pepper.
3. Bake in the oven for 40 minutes, or until the lamb is golden brown.
4. Heat the olive oil in a large pot over medium heat.
5. Add the garlic, chorizo, onion, carrots and celery and cook until the vegetables are softened, about 5 minutes.
6. Add the paprika and bay leaves and cook for another minute.
7. Add the beef stock and bring to a boil.
8. Reduce the heat to a simmer and add the cooked lamb ribs, beans and parsley.
9. Simmer for 30 minutes, or until the stew is thickened.
10. Serve hot with crusty bread. Enjoy!
